  • 12 slices bacon Crispy or chewy, as per preference.
  • 6 slices cheese American, cheddar, or pepper jack.
  • 6 pieces bread (English muffins, bagels, or croissants) Choose based on your preference.
  • 2 tablespoons butter or mayo For added richness.
  • to taste salt and pepper Basic seasoning.
  • optional hot sauce or fresh herbs For extra flavor.

Method
 

Preparation
  1. Whisk the eggs with a splash of milk or cream in a large bowl.
  2. Pour the egg mixture into a greased baking dish and season with salt and pepper.
  3. Bake in a preheated oven at 350°F (175°C) for 13 to 15 minutes or until set.
  4. Once done, cut the baked eggs into portions for easy assembly.
  5. Cook the bacon in a skillet until crispy, then drain on paper towels.
Assembly
  1. Toast the choice of bread lightly, then spread butter or mayo.
  2. Layer on the cooked bacon, a portion of egg, and a slice of cheese.
  3. Top with optional hot sauce or herbs if desired.
  4. Carefully wrap in foil or place directly in sandwich bags for storage.
Reheating
  1. To reheat a sandwich, microwave for 1 minute if refrigerated; for frozen sandwiches, heat for 2 to 3 minutes.
  2. For a crispier edge, split the sandwich and toast the bread in an air fryer or toaster oven for 1 to 3 minutes.

Notes

These sandwiches can be frozen for up to one month. Enjoy with orange juice or a fresh fruit salad for a complete breakfast.
