Ingredients
  

  • 250 g all-purpose flour
  • 200 g granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 115 g melted butter
  • 2 large eggs
  • 150 g strawberries 90g for batter, 60g for glaze
  • 0.5 tsp vanilla extract
  • 120 g powdered sugar
  • 30 ml milk

Method
 

  1. Preheat oven to 175°C and grease loaf pan.
  2. Whisk flour, sugar, baking soda, and salt in a bowl.
  3. Mix melted butter, eggs, 90g strawberries, and vanilla in another bowl.
  4. Fold wet into dry gently with a spatula.
  5. Bake for 50–60 minutes until a toothpick comes out clean.
  6. Cool in pan for 10 minutes, then move to a wire rack.
  7. Whisk powdered sugar, milk, and 60g strawberries for the glaze.
  8. Drizzle over completely cooled bread.

Notes

  • 1. Measure by Weight: Using grams ensures the perfect crumb every time. 2. Cool Completely: If the bread is warm, the glaze will melt off instead of setting. 3. Grease Well: Strawberries get sticky when baked; ensure your pan is thoroughly greased.
