Muffin Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar Regular white sugar works fine
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt Important for flavor
  • 1/2 teaspoon ground nutmeg Adds classic donut flavor
  • 1/2 cup milk Any kind, including oat milk
  • 2 large eggs
  • 1/4 cup melted butter Can substitute with margarine
  • 1 teaspoon vanilla extract
Topping Ingredients
  • 1/4 cup melted butter For dipping muffins
  • 1/2 cup sugar Granulated for coating
  • 1 teaspoon ground cinnamon For the topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or use muffin liners.
  2. In a large bowl, combine flour, sugar, baking powder, salt, and nutmeg. Whisk to mix.
  3. In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Scoop the batter into the muffin tin, filling each cup about 3/4 full.
Baking
  1. Bake for 15-18 minutes or until muffins are puffed and golden brown. A toothpick inserted should come out clean.
  2. Allow the muffins to cool for a few minutes before dipping the tops in melted butter and rolling in the cinnamon sugar mixture.

Notes

These donut muffins are flexible; feel free to swap sugar or try different milk types. They can also be stuffed with jam or topped with different spices according to your preference.
