Preparation
- Wash the cucumbers and cherry tomatoes.
- Slice cucumbers into half-moons or coins.
- Halve the cherry tomatoes.
- Place the sliced cucumbers, halved tomatoes, mozzarella balls, and torn basil into a large bowl.
- Drizzle with olive oil, and sprinkle salt and pepper over the top.
- Add balsamic glaze if using, and give everything a gentle stir to coat.
Notes
Prep the ingredients ahead of time but mix right before serving to prevent sogginess. Store chopped cucumbers, tomatoes, and mozzarella separately in the fridge and wrap basil in a damp paper towel to keep fresh.
