  • 1.5 to 2 lbs boneless, skinless chicken breasts or thighs Use whichever is on sale.
  • 1 can cream of chicken soup Classic shortcut.
  • 1 cup low-sodium chicken broth
  • 1 heaping cup shredded cheddar cheese Block cheese melts better than pre-shredded.
  • 3-4 cups fresh broccoli florets Frozen works in a pinch.
  • 4 oz cream cheese Makes it extra creamy.
  • 1 teaspoon garlic powder Adjust according to taste.
  • Salt and pepper To taste.
  • Optional: a sprinkle of paprika or dried basil

Method
 

Preparation
  1. Place the chicken, cream of chicken soup, chicken broth, cream cheese, garlic powder, salt, and pepper into the slow cooker.
  2. Cook on high for 3 hours or low for 6 hours.
Cooking
  1. About 30-45 minutes before serving, shred the chicken while it is still in the pot.
  2. Add the broccoli and shredded cheddar cheese to the crockpot.
  3. Stir until well combined and cook until the broccoli is tender.
  4. Optional: Leave the lid off for 10 minutes to thicken the sauce.

Notes

Serve over steamed rice or egg noodles and pair with buttery bread for a cozy meal. Store leftovers in the fridge for up to a few days.
