  • 2 pounds stew meat (like chuck or shoulder) Cut into cubes
  • 4 medium carrots Chopped, skin on optional
  • 4 medium potatoes Chopped, skin on optional
  • 1 medium onion Chopped
  • 2 cups beef broth Choose a rich variety
  • 1 clove garlic Browned whole
  • 2 tablespoons tomato paste For extra richness
  • 1 tablespoon Worcestershire sauce Optional splash
  • 1 sprig fresh rosemary Add whole, remove stem before serving
  • 1 tablespoon flour For thickening (optional)
  • 1 cup baby spinach Add in last 10 minutes

Method
 

Preparation
  1. Chop the beef into cubes and season liberally with salt and pepper.
  2. Place the beef into the slow cooker along with carrots, potatoes, onion, and garlic.
  3. Add the beef broth, tomato paste, and Worcestershire sauce.
  4. Stir to combine all ingredients before adding the rosemary sprig.
Cooking
  1. Set the slow cooker to low and let cook for 7-8 hours.
  2. Check around halfway and stir gently.
  3. If desired, mash in some potatoes for a creamier texture before serving.
  4. In the last 10 minutes, add the baby spinach.

Notes

This stew tastes best when left to sit for a day in the fridge. Try using different veggies or making it with chicken for variation.
