Ingredients
  

  • 6 cups peeled diced potatoes
  • 4 cups chicken or vegetable broth
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked crumbled bacon
  • 1 cup heavy cream or half-and-half
  • Salt and black pepper to taste
  • Optional: Extra cheese bacon, and green onions for garnish

Equipment

  • Immersion Blender (optional)
  • Chef's Knife

Method
 

  1. Peel and dice the potatoes into uniform 1-inch pieces.
  2. Place potatoes in the slow cooker and sprinkle with ranch seasoning, cheddar cheese, and bacon.
  3. Pour broth over the mixture until potatoes are submerged.
  4. Cover and cook on Low for 7–8 hours or High for 4 hours.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Partially blend with an immersion blender if a smoother texture is desired.
  7. Serve warm with additional toppings as garnishes.
