  • 2 cups mashed potatoes Use cold leftover mashed potatoes for best results.
  • 1 cup cheese cubes (cheddar, mozzarella, or your choice) Use gooey cheese for a better melt.
  • 1 large egg, beaten For coating.
  • 1 cup breadcrumbs (Panko preferred) For coating and extra crunch.
  • oil for frying Use enough to submerge the bites.
Optional Variations
  • ½ cup bacon bits For added flavor.
  • 1 teaspoon jalapeño, finely chopped For a spicy kick.
  • 1 teaspoon smoked paprika For flavor variation.

Method
 

Preparation
  1. Use cold mashed potatoes and take a scoop of them, flatten it out.
  2. Place a cube of cheese in the center and roll into a ball or patty.
  3. Dunk in beaten egg, then coat with breadcrumbs.
Cooking
  1. Heat oil in a pan until hot.
  2. Fry the bites until golden brown, about 3-4 minutes each side.
  3. Drain on paper towels to remove excess oil.

Notes

Serve hot for the best cheese pull. Can be served with dipping sauces like ranch, chipotle mayo, or honey-mustard. Freeze before frying for better handling.
