  • 4 pieces Chicken thighs or breasts You can use either, depending on your preference.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 medium Onion Chopped, adds flavor.
  • 3 cloves Garlic Minced, avoid garlic powder.
  • 1 cup Heavy cream or half-and-half Can also use cream of chicken soup.
  • 2 cups Chicken broth or stock Essential for fluffy rice.
  • 1.5 cups Long grain white rice Avoid minute rice.
  • 2 tablespoons Butter or oil For browning chicken.
Optional Ingredients
  • 1 cup Mushrooms Optional, for added flavor.
  • 1 teaspoon Paprika For added warmth.
  • 1 tablespoon Fresh herbs If you desire.
  • 1 cup Cheese Optional, for added richness.

Method
 

Preparation
  1. Season your chicken with salt, pepper, and paprika if desired.
  2. Heat a skillet with butter or oil and brown the chicken on both sides.
  3. Add the chopped onions and let them sizzle; then add the minced garlic.
  4. If using, toss in mushrooms and cook for a few minutes.
Cooking
  1. Pour in the rice and stir to slightly toast the grains.
  2. Add the chicken broth until everything is just covered, then pour in the heavy cream.
  3. Reduce the heat, cover with a lid or foil, and let simmer for about 25 minutes.
  4. After 25 minutes, check if the chicken is tender; the sauce should thicken with the rice.
  5. Taste the dish before serving and adjust seasoning as needed.

Notes

For best results, use long grain rice to avoid mushiness. Add vegetables like spinach or peas for a health boost.
