Main Ingredients
  • 1 pound Steak (sirloin or strip, cut into bite-sized pieces) Any cut of steak works well.
  • 8 ounces Pasta (fettuccine, penne, or spaghetti) Classic options but any pasta works.
  • 3 cloves Garlic (minced) Use as much as you like; fresh is best.
  • 4 tablespoons Butter Real butter is recommended.
  • 1 cup Heavy cream or half-and-half Either works for a creamy sauce.
  • 1/2 cup Grated Parmesan cheese Adjust to taste.
  • to taste Salt & pepper Generously season steak.
  • 1 tablespoon Olive oil For searing the steak.

Method
 

Preparation
  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions. In the meantime, cut the steak into bite-sized pieces and toss them in olive oil, salt, and pepper.
Cooking
  1. Heat a heavy-bottomed skillet over medium-high heat. Add the steak in a single layer and sear for about 2 minutes on each side until browned. Remove from the skillet.
  2. In the same skillet, add the minced garlic and sauté until golden and aromatic.
  3. Add butter and cream to the skillet, stirring to combine. Allow the mixture to simmer and thicken.
  4. Stir in the Parmesan cheese until melted and smooth. Season to taste with salt and pepper.
  5. Combine the cooked pasta and steak back in the skillet, tossing to coat everything in the sauce.
Serving
  1. Serve hot, garnished with extra cheese or parsley if desired.

Notes

Let your steak rest at room temperature before cooking for even cooking. Save some pasta water to adjust the sauce consistency if needed. Feel free to add fresh herbs or a splash of white wine for extra flavor.
