  • 1/4 cup flour All-purpose, oat, or almond flour for keto

  • to taste none dried Italian herbs Optional
  • to taste none shredded cheese Optional for extra cheesiness

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a blender, blend the cottage cheese until creamy.
  3. Add the eggs to the blended cottage cheese and mix well.
  4. In a mixing bowl, combine the cottage cheese mixture with flour, salt, garlic powder, and Italian herbs if using.
  5. Mix until well combined.
  6. Spread the mixture onto a nonstick sprayed baking sheet or lined with parchment.
Baking
  1. Bake in the preheated oven for about 20 minutes or until golden and cooked through.
  2. Let the flatbread cool slightly before cutting.
Serving
  1. Top with your favorite pizza toppings if desired, then enjoy!

Notes

Can be frozen but may become soggy upon thawing. Reheat in a toaster for best results. Great for meal prep, store in an airtight container for up to 3 days.
