  • 2 cups sweet corn Fresh or frozen
  • 2 cups bell peppers Any color, chopped
  • 1 cup black beans Rinsed and drained
  • 1/2 cup red onion Chopped
  • 1/4 cup cilantro Chopped
Dressing
  • 1 lime lime juice Freshly squeezed
  • 2 tablespoons olive oil Extra virgin recommended
  • 1 teaspoon salt To taste
  • 1 pinch cumin Optional

Method
 

Preparation
  1. Rinse and drain the black beans and place them in a mixing bowl.
  2. Chop the bell peppers and red onion into bite-sized pieces.
  3. In the mixing bowl, combine the sweet corn, bell peppers, black beans, red onion, and cilantro.
  4. In a separate bowl, whisk together lime juice, olive oil, salt, and cumin (if using).
  5. Pour the dressing over the salad and toss to combine.

Notes

For added flavor, grill the corn before adding it to the salad. This salad pairs well with grilled chicken or tortilla chips.
