  • 1 oz Lime juice Freshly squeezed is preferred.
  • Club soda Club soda Top off for bubbles.
  • Ice For serving.

Method
 

Preparation
  1. In a sturdy glass, place a handful of mint leaves.
  2. Add simple syrup (or sugar) and fresh lime juice.
  3. Muddle the mint gently to release its flavor.
  4. Fill the glass with ice.
  5. Pour in the white rum.
  6. Add coconut milk and stir well.
  7. Top with club soda for fizz.
  8. Garnish with a lime wedge or shredded coconut if desired.

Notes

For variations, consider adding pineapple, berries, or adjusting the rum type. For a non-alcoholic version, skip the rum and double the coconut milk.
