  • 10 leaves Fresh mint leaves The more the merrier!
  • 2 oz White rum Use a good quality rum but not overly expensive.
  • 2-3 oz Coconut milk Full fat for the best texture.
  • 1-2 tbsp Simple syrup or sugar Adjust to taste.
  • 1 oz Lime juice Freshly squeezed works best.
  • to top oz Club soda Pour to create bubbles.
  • as needed Ice Fill glass generously.
  • as desired Shredded coconut For garnish.

Method
 

Preparation
  1. Place mint leaves in a sturdy glass, add sugar (or simple syrup) and lime juice. Muddle gently to release mint oils.
  2. Fill the glass with ice.
  3. Add white rum and stir.
  4. Pour in coconut milk and stir again.
  5. Top with club soda, ensuring it's fizzy but not overly diluted.
  6. Garnish with lime wedge or shredded coconut if desired.

Notes

Experiment with flavors by adding pineapple or berries. For a mocktail, skip the rum and double the coconut milk.
