Ingredients
  

For the Bread
  • 2 cups All-purpose flour Whole wheat can be used, but it may be heavier.
  • 2 tsp Baking powder
  • 1 tsp Salt A pinch is enough.
  • 1 cup Sugar White sugar recommended for the best sweetness.
  • 2 large Eggs Flax egg can be used as a substitute.
  • 1 cup Milk Full-fat is best; alternatives like almond or oat milk are acceptable.
  • 1/2 cup Oil Neutral oils like canola or vegetable are preferred.
  • 2 tsp Cinnamon Don't skimp, the more cinnamon the better.
  • 1 tsp Vanilla Optional but recommended.
For the Topping
  • 1/4 cup Sugar Plus additional cinnamon to taste.
  • 2 Tbsp Melted butter For brushing on top.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking powder, cinnamon, and salt.
  3. In a separate large bowl, whisk the eggs and sugar until creamy.
  4. Add the milk, oil, and vanilla to the egg mixture and mix well.
  5. Gently combine the dry ingredients into the wet ingredients, being careful not to overmix.
  6. Pour half of the batter into a buttered loaf pan, sprinkle cinnamon sugar on top, and then add the rest of the batter followed by another layer of cinnamon sugar.
Baking
  1. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  2. Cool for at least 10 minutes before brushing the top with melted butter and sprinkling more cinnamon sugar on top.

Notes

Store any leftovers tightly wrapped in plastic or in an airtight container. Can be stored at room temperature for a couple of days or in the fridge for up to a week. Freezing is also an option; just place parchment between slices before storing in a freezer bag.
