For the Cookies
  • 1 cup softened unsalted butter Do not use melted butter.
  • 3/4 cup brown sugar Light or dark, but brown sugar is key for chewiness.
  • 3/4 cup white sugar
  • 2 large eggs Room temperature is best.
  • 2 teaspoons vanilla extract Feel free to double for more flavor.
  • 2 1/4 cups all-purpose flour Do not use bread flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Enhances flavor.
  • 2 cups semi-sweet chocolate chips Mix of big and mini chips is optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and white sugar until fluffy.
  3. Add the eggs and vanilla extract; mix well.
  4. Gradually mix in the flour, baking soda, and pinch of salt until just combined.
  5. Fold in the chocolate chips.
Baking
  1. Scoop cookie dough onto a baking sheet lined with parchment paper, spacing them out to avoid crowding.
  2. Bake in the preheated oven for about 10 minutes, or until the edges are set, but the middle looks gooey.
  3. Remove from oven, allowing them to cool on the baking sheet; they will continue to firm up as they cool.

Notes

Chill the cookie dough for at least 10 minutes for better flavor and texture. Parchment paper helps prevent sticking.
