Ingredients
  

For the chicken mixture
  • 1 lb ground chicken Can substitute with ground turkey.
  • 1 medium onion, grated This helps to keep the kofta juicy.
  • 2 cloves garlic, minced Adds flavor to the mixture.
  • 1/4 cup fresh parsley, chopped Can use cilantro instead if preferred.
  • 1 tsp cumin A key spice for flavor.
  • 1 tsp coriander Adds warmth to the kofta.
  • 1/4 cup bread crumbs Helps bind the mixture together.

Method
 

Preparation
  1. In a large bowl, mix together ground chicken, grated onion, minced garlic, parsley, cumin, coriander, and breadcrumbs.
  2. Use your hands to combine the ingredients until just mixed. Avoid overmixing to keep the kofta tender.
  3. Shape the mixture into logs and thread them onto skewers.
Cooking
  1. Cook the skewers on a grill, under a broiler, or in a nonstick pan on medium-high heat.
  2. Cook for about 4-5 minutes on each side until fully cooked and browned.
  3. Check for doneness by cutting into one skewer to ensure it's cooked through but not dry.

Notes

Use wet hands to shape the chicken mixture to prevent sticking. Soak wooden skewers in water for 30 minutes before use to avoid burning. Serve with yogurt sauce, flatbread, or a simple salad for an enhanced experience.
