  • 2 cups cooked chicken (shredded or diced) Rotisserie chicken works well.
  • 1 can sweet corn Or 1 1/2 cups frozen corn.
  • 2-3 medium potatoes, peeled and chopped
  • 1 whole onion, diced Extra flavor.
  • 3 cups chicken broth The boxed kind is fine.
  • 1-2 stalks celery, sliced thin
  • 1 whole bell pepper, diced Optional.
  • 1 cup half and half Use milk for lighter chowder.
  • 2-3 cloves garlic, minced Don't skip this.
  • 2 tablespoons flour For thickening.
  • to taste salt and black pepper
  • 1 tablespoon butter for sautéing
  • as needed fresh parsley or scallions for topping Optional.

Method
 

Preparation
  1. Melt butter in a big pot over medium heat.
  2. Add onions, celery, and bell pepper. Stir until soft, avoiding browning.
  3. Add garlic and cook for a short time.
  4. Sprinkle in flour and stir for about a minute, until it becomes pasty.
  5. Pour in chicken broth and scrape any tasty bits.
  6. Add potatoes and simmer until fork-tender (about 10 minutes).
  7. Add chicken and corn, then lower the heat.
  8. Stir in half and half and simmer gently, avoiding a boil.
  9. Season with salt, pepper, and paprika if desired.
  10. Simmer until thickened, adding broth if too thick. Serve hot.
  11. Top with parsley or scallions before serving.

Notes

Perfect for cozy nights, can be topped with bacon, cheese, or served with crusty bread. Leftovers can thicken, just add a splash of broth or milk when reheating.
