  • 3-4 medium zucchini, sliced Not paper-thin to avoid mush
  • 1 medium onion, diced Sweet onions are extra tasty
  • 2 cups shredded cheese Cheddar is classic, feel free to mix it up
  • 2 large eggs, lightly beaten Helps hold everything together
  • 1/2 cup milk Use any milk you have
  • 1 cup breadcrumbs The buttery kind is extra tasty
  • 2-3 cloves garlic, minced
  • 1/2 teaspoon salt Adjust based on cheese saltiness
  • Pepper To taste
  • optional fresh herbs (parsley, basil) For added flavor

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Sauté the onion and zucchini in a splash of oil for 3-4 minutes until softened, but not browned.
  3. In a large bowl, mix together the sautéed veggies, half of the cheese, eggs, milk, garlic, salt, and pepper.
  4. Pour the mixture into a greased baking dish, spread it out, and top with the remaining cheese and breadcrumbs.
Baking
  1. Bake in the preheated oven for about 30 minutes, or until bubbly and golden on top.
  2. Let it cool for five minutes before serving to avoid burns.

Notes

If zucchini is watery, salt the slices and rest on a towel for fifteen minutes before mixing. For added protein, consider adding cooked chicken or ground turkey. If the top browns too quickly, cover loosely with foil while baking.
