  • 4 large russet potatoes or whatever needs using in your pantry
  • 1 pound ground beef
  • 1 packet taco seasoning or use your own blend
  • 0.5 cup milk mixed in for creaminess
  • 2 cups shredded cheddar cheese adjust based on cheese preference
  • 0.5 cup sour cream plus more for serving
  • 1 handful green onions for topping
  • to taste salt and pepper just a pinch

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Chop the potatoes into small bite-sized pieces, coat them with a little oil, and bake until golden and crispy (25-30 minutes).
Cooking
  1. In a large skillet, brown the ground beef and drain the fat.
  2. Add taco seasoning, splash of water, and let simmer until thickened, mixing in milk at the end.
  3. Transfer crispy potatoes to a baking dish, pile on the taco beef, and sprinkle shredded cheese on top.
  4. Bake until cheese is melted and gooey, then dollop with sour cream and green onions.
  5. Let it cool for a minute before serving.

Notes

Feel free to experiment with different meats and cheeses. Store leftovers in an airtight container for up to three days.
