  • 1 pound ground beef Regular or lean.
  • 4-5 medium potatoes Russet is preferred but any type will work.
  • 1 medium onion Yellow or white.
  • 2 cups shredded cheddar cheese Or any cheese that melts well.
  • 2 cloves garlic Or a good sprinkle of garlic powder.
  • 1 cup milk
  • 2 tablespoons flour
  • 2 tablespoons butter
  • to taste Salt and pepper
  • 1 pinch paprika or cayenne To add some heat.
Optional Toppings
  • Chopped green onion or parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Peel (or leave unpeeled) and slice the potatoes into thin rounds.
  3. In a large skillet, brown the ground beef over medium heat.
  4. Add the chopped onion and minced garlic to the beef halfway through cooking and cook until softened.
  5. Drain any excess grease from the beef mixture.
  6. Transfer the beef mixture to a greased casserole dish, layering the potato slices on top.
  7. In a saucepan, melt the butter, whisk in the flour, and gradually add the milk, whisking until smooth and thick.
  8. Remove from heat, then stir in salt, pepper, and most of the shredded cheese.
  9. Pour the cheese sauce over the potatoes and beef, and sprinkle the remaining cheese on top.
  10. Cover the dish with foil and bake for about 35 minutes. Remove the foil for the last 10-15 minutes to let the cheese brown and bubble.
  11. Let it cool for a few minutes before serving.

Notes

This dish can be customized with different meats or cheeses. Leftovers can be stored in an airtight container for 3 to 4 days and taste even better the next day.
