  • 1 pound ground beef Can substitute with turkey or chicken.
  • 2 cups macaroni Elbow or shells are recommended.
  • 1 small onion, diced Optional.
  • 2 cloves garlic, minced Can use jarred minced garlic.
  • 3 cups beef broth Use any preferred brand.
  • 1 can diced tomatoes Optional.
  • to taste salt and pepper Add according to preference.
  • 1.5 cups shredded cheddar cheese Use real cheese for better flavor.
  • 1/4 cup milk Adjust as needed.
  • splash ketchup For flavor.
  • dash mustard For flavor.

Method
 

Cooking
  1. In a large skillet, brown the ground beef fully over medium heat.
  2. Add diced onion and minced garlic to the skillet and cook until softened.
  3. Stir in the beef broth and bring to a boil.
  4. Add the macaroni and cook according to package instructions until al dente.
  5. Stir in diced tomatoes (if using), shredded cheddar cheese, milk, ketchup, and mustard.
  6. Season with salt and pepper to taste.
  7. Simmer until everything is heated through and the cheese is melted, adjusting the thickness with extra milk or broth if necessary.

Notes

Serve with a sprinkle of smoked paprika or extra cheese. Store leftovers in an airtight container and add a splash of milk when reheating for creaminess.
