  • 1 cup All-purpose flour Helps with the fluff factor
  • 1 tbsp Baking powder Not to confuse with baking soda
  • 1 tbsp Sugar Optional if you don’t like sweet
  • 1 tsp Salt
Wet ingredients
  • 1 cup Buttermilk Or milk with a splash of lemon juice
  • 2 large Eggs
  • 1/4 cup Melted butter
Add-ins
  • 1 cup Cheddar cheese, shredded Sharp is best
  • 1/2 cup Jalapeños, diced small Add seeds for extra heat

Method
 

Preparation
  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, combine the dry ingredients: cornmeal, flour, baking powder, sugar, and salt.
  3. In another bowl, whisk together the wet ingredients: buttermilk, eggs, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing.
  5. Fold in the cheddar cheese and diced jalapeños.
Cooking
  1. Ladle the batter into the preheated waffle iron and cook until golden brown, about 5-7 minutes.
  2. Remove the waffles from the iron and keep warm in a low oven while you cook the remaining batter.
