Ingredients
  

Salad Base
  • 4 cups mixed greens Any leafy greens work
  • 1 can canned salmon Wild-caught preferred
  • 1 cup chopped celery Optional for crunch
  • 1 cup chopped bell pepper Optional for color and taste
Dressing and Seasoning
  • 2 tablespoons mayonnaise or Greek yogurt Can also use Dijon mustard
  • 1 teaspoon salt To taste
  • 1 teaspoon black pepper To taste
  • 1 teaspoon dill If available, for added flavor
  • 1 tablespoon lemon juice Optional, for brightness

Method
 

Preparation
  1. In a mixing bowl, combine the canned salmon (drained) with the mixed greens.
  2. Add the chopped celery and bell pepper, if using.
  3. In a separate small bowl, mix together the mayonnaise or Greek yogurt, salt, black pepper, dill, and lemon juice.
  4. Pour the dressing over the salmon and greens and toss gently to combine.
  5. Serve immediately or refrigerate for 30 minutes to let the flavors meld.

Notes

For a more filling meal, try adding boiled eggs, cooked pasta, or roasted veggies. Feel free to get creative with the ingredients based on what you have in your fridge!
