  • 1 can canned salmon Use wild-caught if possible
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh dill Chopped
  • 1 tablespoon lemon juice Freshly squeezed
  • 4 slices crusty bread For serving
For the Salmon Cakes
  • 1 can canned salmon
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon mayonnaise
  • 1 teaspoon Old Bay seasoning
For Pasta with Salmon
  • 8 ounces angel hair pasta
  • 1 cup peas Frozen or fresh
  • 1 can canned salmon
  • 1 tablespoon lemon zest

Method
 

Preparation
  1. In a bowl, mix the canned salmon, Greek yogurt, fresh dill, and lemon juice to prepare the creamy salmon salad.
  2. For the salmon cakes, combine canned salmon, breadcrumbs, egg, mayonnaise, and Old Bay seasoning in a separate bowl.
  3. Cook angel hair pasta according to package instructions. Add peas during the last two minutes of cooking.
  4. Drain pasta and peas, then fold in canned salmon and lemon zest.
Cooking
  1. Pan-fry patties made from the salmon cake mixture until golden brown on both sides.

Notes

Canned salmon is versatile and can be used in salads, stir-fries, or on its own. Leftovers can be easily stored in the fridge for a couple of days.
