Ingredients
  

For the Turkey
  • 1 whole whole turkey (about 12-14 pounds), thawed
  • 1 cup unsalted butter, super soft
  • 4-5 tablespoons Cajun seasoning Make your own or use a store brand
  • 4 cloves garlic, minced
  • 1 splash hot sauce (Louisiana style works wonders)
  • 2 teaspoons smoked paprika
  • to taste Salt and pepper Just enough
  • Several sprigs fresh thyme
  • 1 onion onion, quartered
  • 1 lemon lemon, halved
  • 1 splash olive oil For brushing

Method
 

Preparation
  1. Remove the giblets and extra stuff from the cavity of the turkey. Pat the bird dry with paper towels.
  2. In a large bowl, mix soft butter, Cajun seasoning, garlic, hot sauce, smoked paprika, salt, and pepper.
  3. Use your hands to scoop some of the butter mixture under the skin on the breasts.
  4. Massage the remaining butter all around the turkey.
  5. Stuff the onion, lemon, and thyme into the turkey's cavity.
  6. Brush the skin with olive oil.
Cooking
  1. Place the turkey on a roasting rack and cover with foil.
  2. Roast at 350°F for 13-15 minutes per pound.
  3. Remove the foil during the last 45 minutes to brown the skin.
  4. Rest the turkey for at least 15 minutes after it’s done before carving.

Notes

For a juicier turkey, consider adding chicken broth for basting. Make sure the turkey is at room temperature before cooking for consistent cooking. Use a meat thermometer to ensure it reaches 165°F in the thickest part.
