- Preheat oven to 190°C and carve a well into the top third of the peeled onion.
- Place vegan butter into the well.
- Whisk together olive oil, Cajun seasoning, salt, and any optional spices; pour over the butter.
- Wrap the onion tightly in aluminum foil and place in a baking dish.
- Roast for 60 minutes until fork-tender.
- Optional: Open the foil and broil for 5 minutes for extra color.
- Serve hot with the remaining juices from the foil and a garnish of parsley.
Notes
Use a sweet onion variety like Vidalia for the best results.
