Ingredients
  

Pasta and Broccoli Ingredients
  • 12 oz short pasta (penne or rotini) Holds broccoli better than spaghetti.
  • 1 bunch fresh broccoli Can substitute with frozen.
  • 2 tbsp olive oil Use good quality olive oil.
  • 2 cloves garlic Smash instead of mince.
  • 1/2 cup grated parmesan cheese Add to taste.
  • 1 pinch chili flakes Optional for heat.
  • 1 lemon squeeze of lemon juice Optional for brightness.
  • to taste salt & pepper Essential for flavor.

Method
 

Cooking the Pasta and Broccoli
  1. Start boiling water in a large pot, and add salt.
  2. Add the pasta to the boiling water and cook according to package directions.
  3. In the last 2-3 minutes of pasta cooking, add the broccoli to the pot.
  4. Reserve a mug of pasta water, then drain the pasta and broccoli together.
Preparing the Sauce
  1. In the same pot, heat olive oil over medium heat.
  2. Add smashed garlic and sauté until fragrant, being careful not to burn it.
  3. Add the drained pasta and broccoli to the pot and mix well.
  4. Stir in reserved pasta water gradually to reach desired sauce consistency.
  5. Add parmesan cheese, chili flakes, and season with salt and pepper.
  6. Toss everything together until combined.

Notes

Serve immediately with additional parmesan and a sprinkle of lemon zest on top. Can be stored in the fridge for meal prep.
