Ingredients
  

For the tart crust
  • 1 cup all-purpose flour for a classic shortcrust
  • 1/2 cup butter, cold cut into small pieces for crust
  • 2 tablespoons sugar to sweeten the crust
  • 1/4 teaspoon salt to balance flavors
For the ganache filling
  • 1 cup heavy cream for the ganache base
  • 8 ounces semi-sweet or dark chocolate, chopped for the ganache
  • 1 cup fresh blueberries plus a handful for decoration
  • 1 pinch salt to enhance flavor

Method
 

Prepare the Tart Crust
  1. In a bowl, mix flour, sugar, and salt. Add cold butter and mix until the mixture resembles damp sand.
  2. Press the mixture into a tart pan to form the crust.
  3. Blind bake the crust at 350°F (175°C) for about 10 minutes until lightly golden.
Make the Ganache
  1. In a saucepan, warm the cream over low heat until just bubbling.
  2. Remove from heat and add the chopped chocolate. Let it sit for 1-2 minutes.
  3. Stir gently until the mixture is smooth and glossy.
  4. Add a handful of blueberries and a pinch of salt, mixing gently.
  5. Let the ganache cool slightly before pouring it into the cooled crust.
Chill and Serve
  1. Chill the tart in the refrigerator for at least 2 hours until set.
  2. Decorate with additional blueberries before serving.

Notes

Use room-temperature ingredients for the smoothest ganache. Consider adding lemon zest or a splash of blueberry liqueur for extra flavor. Serve with a sprinkle of sea salt for enhanced taste.
