Ingredients
  

Main ingredients
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • 2 pounds chuck roast, cut into cubes You can use pre-cut stewing beef.
  • 2 cloves garlic, chopped
  • 1 cup beef broth Just enough to not quite cover the meat.
  • 1 can diced tomatoes
  • 1/2 cup dried apricots or raisins, optional Adds sweetness.
Spices
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon Use less than the other spices.
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground ginger

Method
 

Preparation
  1. Dice an onion.
  2. Heat a splash of olive oil in your pot over medium-high heat and toss in the onion with a pinch of salt until soft.
  3. Add the beef cubes, letting them brown on all sides without overcrowding.
  4. Add the chopped garlic and then toss in your spices.
  5. Pour in about a cup of beef broth, just enough to not quite cover the meat.
  6. Include diced tomatoes and if desired, apricots or raisins.
Cooking
  1. Cover the pot and let everything cook on low heat for about 2 hours, stirring occasionally.
  2. When the meat is tender, the dish is finished.

Notes

Serve over fluffy couscous or with crusty bread, and garnish with fresh herbs or a squeeze of lemon. This dish tastes even better the next day.
