Ingredients
  

For the Stir-Fry
  • 1 pound flank or sirloin beef, thinly sliced Slice against the grain for tender pieces.
  • 1 cup bell peppers, sliced Any color is great; choose your favorites.
  • 2 cups broccoli florets Fresh or frozen can be used.
  • 2 medium carrots, sliced into coins
  • 1/2 medium onion, sliced For added flavor.
  • 1 cup snap peas or green beans Optional, but adds crunch.
For the Sauce
  • 1/4 cup soy sauce Use tamari for gluten-free option.
  • 3 cloves garlic, minced
  • 1 inch ginger, minced Fresh for best flavor.
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar Optional, adds sweetness.

Method
 

Preparation
  1. Slice the beef thinly and chop the vegetables.
  2. Freeze the beef for about 15 minutes to make slicing easier.
Cooking
  1. Heat a skillet over high heat and add a little oil.
  2. Sear the beef until browned, then set aside.
  3. Add the vegetables to the skillet and stir-fry until crisp.
  4. Return the beef to the pan, add the prepared sauce, and toss everything together until heated through.

Notes

For meal prep, slice the beef and vegetables ahead of time and store in the fridge. Leftovers can be used for lunches.
