  • 2 pounds beef roast (chuck or pot roast) Choose a fattier cut for better flavor and tenderness.
  • 1 teaspoon salt To season the roast.
  • 1 teaspoon pepper To season the roast.
  • 1 teaspoon garlic powder Optional seasoning.
  • 1 cup beef broth For cooking the roast.
For the Mashed Potatoes
  • 4 cups mashed potatoes Store-bought or homemade.
For the Gravy
  • 1/4 cup flour To thicken the gravy.
  • 2 cups beef broth Use drippings from the roast for extra flavor, or jarred gravy.
  • 1 tablespoon Worcestershire sauce Optional for added flavor.
For Serving
  • 4 slices bread Plain white, Texas toast, or sourdough.

Method
 

Cooking the Beef
  1. Season the beef roast with salt, pepper, and garlic powder.
  2. Place the seasoned roast in a crockpot with beef broth.
  3. Cook on low heat for 6-8 hours, until the beef is tender enough to shred.
Preparing the Mashed Potatoes
  1. While the beef is cooking, prepare the mashed potatoes according to your preference.
Making the Gravy
  1. Use the beef drippings and add to a saucepan over medium heat.
  2. Whisk in flour and cook for 1-2 minutes.
  3. Gradually add the broth, stirring constantly until thickened.
  4. Add Worcestershire sauce if using.
Assembling the Dish
  1. Slice the bread and place on plates.
  2. Pile shredded beef on top of the bread.
  3. Spoon a generous portion of mashed potatoes atop the beef.
  4. Drown everything in the gravy.

Notes

Feel free to use deli-sliced roast beef and jarred gravy for a quicker version. Leftover mashed potatoes work perfectly in this dish.
