  • 1 kg beef belly or beef navel Choose the best cut for rich flavor.
  • 1 cup salt For curing.
  • 1/2 cup sugar For curing.
  • 1 tbsp black pepper For added flavor.
  • 2 cloves garlic Minced for curing.
  • 1/2 tsp smoked paprika Optional for extra smokiness.

Method
 

Curing
  1. Start with a cut of beef belly or beef navel and trim the fat to get a balance.
  2. Mix salt, sugar, black pepper, minced garlic, and smoked paprika in a bowl.
  3. Rub the cure mixture all over the meat, ensuring it gets into all crevices.
  4. Place the meat in the fridge for about a week, flipping and massaging it every day or two.
Cooking
  1. After curing, rinse the beef belly or navel and pat it dry.
  2. Smoke using mild wood (apple or hickory) or roast it in the oven on low heat until it reaches a firm texture.
  3. Slice and serve the beef bacon, enjoying the flavor.

Notes

Beef bacon can be used in many recipes like salads, burgers, and breakfast burritos. Save rendered fat for cooking.
