Ingredients
  

Eggplant Preparation
  • 2 whole eggplants Cut into thick rounds or cubes
Seasoning
  • 1 teaspoon olive oil Optional for low-calorie option
  • 1 teaspoon salt For drawing out moisture and bitterness
  • 1 teaspoon black pepper Adjust to taste
  • 1 teaspoon garlic powder Optional for added flavor

Method
 

Preparation
  1. Slice off both ends of the eggplant and cut into thick rounds, about half an inch thick.
  2. Sprinkle salt over the cut eggplant and let it sit for 10-20 minutes to draw out moisture.
  3. Pat the eggplant slices dry with a towel.
Cooking
  1. In a large bowl, toss the eggplant slices with olive oil, black pepper, and garlic powder.
  2. Preheat your air fryer to 375°F.
  3. Place the seasoned eggplant slices in the air fryer basket in a single layer.
  4. Cook for 12-15 minutes, flipping halfway through until they are golden and crispy.
Serving Suggestions
  1. Serve on a salad with honey-mustard vinaigrette, inside a pita with greens and yogurt, or atop pasta with cheese.
  2. Enjoy hot straight from the fryer!

Notes

These eggplants reheat well in the air fryer. Avoid the microwave for best results, and do not freeze cooked eggplant.
